Recipe for Sitka Rolls

These sweet, light rolls emerged from Laura Webster's kitchen in Sitka, and became a tradition at family gatherings.

1 package yeast
1 cup milk
1/2 cup sugar
1/2 cup shortening
3 eggs
1/2 teaspoon salt
4 1/2 cups flour

Mix in the evening and let stand until morning. Then divide dough into 4 equal parts. Roll each portion to size of a pie, and cut into wedge-shaped pieces each the size of 1/8 of pie. Roll from the wide edge in. Let it stand 4 hours and bake in a quick (375 degree) oven.

Tip, from John and Margee Webster: This dough also can make marvelous cinnamon rolls. Roll thin into a large, long rectangle. Cover with brown sugar, cinnamon and dabs of butter; roll into a log and slice the log into rolls. Place the rolls in a pan whose bottom has been coated with butter, brown sugar and cinnamon. Leave room around the rolls, so they can expand when they bake.
